Harvesting is an important skill to level if you want to cook and craft potions to use in your adventures through New World. Leveling is as simple as picking every plant that you can. The trick is finding them.
To level up harvesting in New World, you'll need to start with easy-to-find plants like farm plants. These are easy to find as there are several named locations like Arruda Ranch in southeastern Monarch's Bluff or Dayspring Mills just north of the town in First Light.
You'll also be able to harvest hemp right away. This plant is scattered throughout the low-level zones, particularly in open plains areas. Look for the purple flowers.
As your harvesting skill increases, you'll be able to track the various plants you can harvest. Icons marking these plants will automatically appear on your compass, so be sure to detour for them whenever their icons appear.
Once your skill hits level 30, be sure to harvest magical plants like soulsprout and lifebloom. While not as plentiful, these plants provide a lot of experience and yield various motes used to craft other useful items. You can track these magical plants at level 45, so be sure to detour them when their icons show up on your compass.
Once you are able, be sure to harvest any silkweed and wirefiber that you find. These plants are required for high-level crafting, and they also give lots of experience points.
As you adventure through Aeternum, pick any and all plants that you run into. If you keep this up, you'll reach max level in harvesting in no time.
